Happy Birthday Jordan!

A little late, I know, but we did actually celebrate Jordan's birthday ON his actual birthday.  He opened his presents in the morning (just some very needed clothes and a few little things I had picked up for him from NY).  No, I did not buy him the paintball gun.  He WON it the day before his birthday. It seems all of the cool stuff we now own is stuff that Jordan has won through APX (thanks Matt!).  Jordan is very proud of his new gun :)  And very excited to use it as soon as he can!  When he got home from work, a few friends came over to celebrate with us.  I made a yummy ice-cream cake and brownies.  Even though Jordan had to work on his birthday he enjoyed getting all the phone calls and cards in the mail from family and celebrating with friends that evening.
Oh, and here is the recipe for the ice-cream cake:

INGREDIENTS:

1 (16 ounce) can chocolate syrup

¾ cup peanut butter

19 ice-cream sandwiches

1 (12 ounce) container frozen whipped topping, thawed

1 cup toffee pieces

DIRECTIONS:

1.  Pour the chocolate syrup into a medium microwave safe bowl and microwave 2 minutes on high.  Do not allow to boil.  Stir peanut butter into hot chocolate until smooth.  Allow to cool to room temperature.

2.  Line the bottom of a 9x13 inch dish with a layer of ice-cream sandwiches.  Spoon half the chocolate mixture over the sandwiches.  Spread the whipped topping over that.  Top with half the toffee pieces.  Repeat layers.  Freeze until firm, 1 hour.  Cut into squares to serve.

So EASY!  And very Yummy!

Happy belated birthday Jordan! Hhhmm, that ice cream cake sounds yummy. I want to try and make it now!
